You may already have enjoyed our delicious French toast cups (get the recipe here). We’ve been experimenting with some variations, which take a little less time and don’t require ramekins or the oven. Start with the base recipe, and then try this:
- Instead of using bread, you can toast some frozen waffles, then coat a frying pan (at medium heat) with butter. Cut the waffles into bite-sized pieces and arrange them in the bottom of the pan, pour the egg mixture over the waffles, and cook at medium heat until the eggs are done. Flip once. For more protein, use one egg for every waffle.
- You can substitute almond milk for cow’s milk in the recipe.
- For an extra nutritional boost, add some walnuts to the finished dish. You can also either add some fresh fruit, or thaw frozen fruit in the microwave and use it as a hot, healthy fruit sauce.
- Don’t forget the real maple syrup!
