Maple French Toast Cups
You can also make this recipe as a casserole if you don't have ramekins!

Ingredients
- 4 Ramekins or small oven safe bowls
- 6 slices bread cut into 1 inch cubes
- 2 beaten eggs
- 1 tsp pure vanilla
- 4 tbsp pure Ontario maple syrup – medium, amber or dark grade
- ¼ cup milk
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 350 F.
- Lightly spray or coat ramekins with oil and place on baking tray.
- Combine beaten eggs, milk, vanilla, maple syrup and cinnamon in a mixing bowl and whisk for a minute or so until mixed well.
- Add bread cubes to a mixing bowl and pour egg mixture on top.
- Toss well to coat all of the bread cubes.
- Place cubes into ramekins and press lightly. Bake for 15 minutes until lightly browned.
- Serve with a small scoop of ice cream or a dollop of whipped cream and more maple syrup. Experiment with chocolate chips, chopped strawberries or blueberries.
