Maple Syrup Gingerbread Cookies

Ingredients

  • ½ cup butter, softened
  • 2/3 cup cup pure Ontario maple sugar (or brown sugar) lightly packed
  • 1/4 cup pure Ontario maple syrup – medium or amber grade
  • 1 egg, lightly beaten
  • 2½ cups all purpose flour
  • ½ tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tbsp ground ginger

Instructions

  1. With an electric mixer, beat butter and sugar until fluffy.
  2. Add beaten egg and maple syrup. Beat until well combined.
  3. Add flour, baking soda and spices to mixture.
  4. Stir with a spoon until combined and mixture forms into a soft dough.
  5. On a lightly floured surface, knead until smooth.
  6. Form into a disc shape and wrap in plastic.
  7. Place in refrigerate for 30 minutes or until firm.
  8. Preheat oven to 350 F.
  9. Line baking sheets with parchment paper.
  10. Roll dough until just under a ¼ inch thick, using two sheets of parchment makes this easier.
  11. Cut shapes in dough using cookie cutters or round glass. Use up the scraps by rerolling.
  12. Place cookies 2 cm apart on cookie tray and bake for approximately 15 – 20 minutes or until cookies are firm to the touch.
  13. Let the cookies sit on the tray for 5 minutes before moving to a wire rack to cool.
  14. Decorate as you wish!
